Chocolate Crème Brulee
Ingredients
- 3 Cups Heavy Cream
- 3/4 cup granulated sugar
- 7 eggs yolks
- 1 Tablespoon vanilla extract
- 1/2 cup chopped semi sweet chocolate
- 6 8oz ramekins
- 1/4 cup sugar for caramelizing
Instructions
- Preheat
oven to 350°.
- Melt
chocolate over a double boiler or in microwave. Set aside.
- In
medium saucepan heat cream to a boil. Remove from heat. In a separate bowl, mix
together sugar, egg yolks and vanilla.
Add melted chocolate to cream. Stir to combine. Add chocolate mixture to
egg mixture in small amounts so eggs do not cook. Mix together. Pour ¾ to 1 cup of mixture into each ramekin. Place ramekins on a sheet pan in a water
bath. Bake 45-50 minutes or until almost firm. Custard should be slightly
wiggly in the center. Cool completely.
- Set oven to broil.
- Sprinkle sugar evenly over each crème brulee. Place
crème brulee on a cookie sheet in oven. Watch for a brown crust to form over
custard. Be careful not to burn sugar. Remove from oven, cool before serving.
